
Holi, Colours, New Arrivals and A Boat Trip with Eagles – Travels with Allie.
Fi and I had a very lazy day. The sky was amazingly blue and cloudless today. It was about 22C and felt very hot in the sun. We spent the day at the pool, pegged out, dozing (me) and reading (both of us).


Bob and Stuart went off to play tracer golf at Top Tracer. https://www.toptracer.com/ How to explain it? It’s like a very high tech driving range where your ball is traced, your swing analysed and also every aspect of the strike and game. It’s a very social facility here. Dining and drinking in your own “bay” . They absolutely loved it and had a fabulous time. Learned some things about their strokes and swing. Will definitely go back again.
After that, they called in at Walmart (of course they did!) and bought up some supplies for the weekend. They got back about 2:30 and we met them for lunch at the apartment…. then we all went back to the pool for more sunbathing, reading and…. errrrr. sleeping – at least in my case.




Tonight we had slow roasted rack of ribs for dinner. Honestly, just the most enormous rack of ribs that cost abut $15 all in. A total bargain. They are so meaty, not like the meagre bones we get at home. Basically a bone with some red dyed skin on it!!! These were hugely meaty – not fatty – and so succulent. We did 2/3 of the rack with a wet sauce and about 1/3 with a dry rub. Difficult to say which we liked best. And despite eating like desperate men, there were loads left. We ate the ribs with mac and cheese topped with crispy bacon. Oh lord….. to be honest, we didnt even make it from scratch, we used Velveeta mix. Deliberately. I associate that with my memories of what mac and cheese should be. Can I make it better from scratch and to more modern “cheesy” tastes? Yes of course. But somehow, Velveeta kinda sums up what it should taste like….
So we gorged and yummed and washed it all down with margaritas…. a most enjoyable day…
